At GG's Waterfront , we are seeking a highly motivated and efficient Prep Cook to be the backbone of our kitchen operations. The Prep Cook is essential to ensuring our chefs and line cooks have all the ingredients accurately prepared and organized for a smooth and successful service. Key Responsibilities and Duties:

• Ingredient Preparation:
  • Follow the Head Chef's daily prep list accurately and efficiently.
  • Wash, peel, chop, slice, and measure a variety of vegetables, fruits, and meats.
  • Portion and weigh ingredients according to established recipes and standards.
  • Perform basic cooking tasks such as reducing sauces, making stocks, or parboiling food.
  • Prepare simple dishes like salads and cold appetizers as needed.
• Organization and Stocking:
  • Set up and stock workstations with all necessary ingredients and tools before service begins.
  • Properly label, date, and store all prepared food and supplies in the correct locations (FIFO rotation).
  • Assist with receiving deliveries and organizing inventory in the walk-in and dry storage areas.
• Sanitation and Cleanliness:
  • Maintain a clean, organized, and sanitary work environment at all times.
  • Wash dishes, pots, pans, and utensils used during prep.
  • Sanitize surfaces and equipment regularly and dispose of trash.
  • Comply with all health, safety, and sanitation guidelines and regulations.
• Teamwork:
  • Communicate effectively with the Head Chef, Line Cooks, and other kitchen staff.
  • Be willing to assist with other kitchen duties as assigned.

Skills and Qualifications:

• Experience: Proven experience as a Prep Cook or similar role is a plus, but we are willing to train motivated individuals.
• Knife Skills: Knowledge of basic knife cuts and the ability to work safely and quickly.
• Organizational Skills: Excellent attention to detail and ability to maintain a clean, organized workspace. 
• Time Management: Ability to manage a prep list and prioritize tasks in a fast-paced environment.
• Physical Stamina: Must be able to stand for long periods, lift up to 50 lbs., and handle the physical demands of a busy kitchen.
• Team Player: Positive attitude and strong ability to work collaboratively with a team.
